Kensington Market will welcome a new bagel shop to its midst later this fall. Showcasing traditional Montreal-style bagels, Nu Bügel will be a sort of hybrid between a takeout shop and a sit down café.
“You’re going to be able to grab something light, like a bagel, some soup or a salad, but at the same time, you’re going to be able to enjoy it with a really good atmosphere,” says co-owner Juan Hernandez.
Montreal-style bagels are boiled in honey-water before being baked in a wood-fired oven. The result is a sweeter, denser bagel than the New York style.
Nu Bügel will serve bagels, salads, soups and sandwiches to the bevy of shoppers and residents around the area. All bagels will be produced on-site.
“We’re positive that this is going to be something really good that we’re bringing to Kensington Market.”
Nu Bügel is expected to open within a month.
